Hey, ya'll!!! I was wondering if anyone knew what Gleirs Goetta is and hows it made with deer meat? I was in a chat room and some ladie from KY. told me about it and said that any deer hunter should know what it is...I my self have never heard of it! I did some internet suffin and really didn't make since of it! If anyone knows a lil about it or how's it made i'd like any thoughts on it! Thank you ! & Hunt on! My friends!

You can go to the supermarket and buy some Dorsey's pinhead oats (Kroger's and Biggs usually carry them). They are usually located in the spice aisle near the flour and sugar. They are one of the main ingredients of goetta and they will have a recipe on the package.

I have been using the following resipe for years. It is probably pretty close to the recipe on the pinhead oats package.

I have never made them with venison but I would just replace the beef with venison.

Ingredients:
3 lbs. pork sausage
1 lb. ground beef
(4-5) Bay Leaves
2 Large Onions (Chopped into small pieces)
2 lb. bag of oats (Pinhead Oats only)
Salt and Pepper (to your personal taste)

Directions:
In a large pot, boil ten cups of water.
When boiling, add oats, salt, pepper, and bay leaves.

Cook on low heat for approximately one hour, stirring often and adding water to the oats soft.

In a large skillet, mix sausage and beef together and fry until brown add onion and fry until the onion is softened. Remove a little amount of grease, if desired.

Remove the bay leaves from the oats and stir meat and onions in with the oats.

When completely mixed together, put into container(s) and let stand until cool.

Put into refrigerator and allow to stand over night.

Cut into approximately one pound squares and double wrap in plastic wrap and freeze. When ready to fix, unthaw and fry. Enjoy!

Gleir's Goetta is made in Covington, Ky. by the Gleir's Meat company. You can buy it in most Krogers stores in the greater Cinti. area and it is served in many resturants in that area. The closest we have been able to buy it is the Krogers in Batesville.
