Yes you can hunt in an AR platform, so long as the round is legal and you follow all other rules for rifles (round count, etc).

I honestly was never much of a gun hunter until I started hunting with an AR. I love the platform and I LOVE how it pisses people off when they see an evil black gun in the photos ... laugh

I still would rather bow hunt, but if I am going to take a gun deer hunting, it will be my AR in 450BM. cool
