Bean, I have canned deer meat for years, I just opened a jar that I canned in early 2010 and it tasted as fresh as the day it was canned. I use it to make BBQ sandwiches or put it in soup or chili. These are great to take camping or to deer camp. Good luck on canning this year, you will enjoy it.
