I would dump it into a sauce pan, water and all, heat over a med. flame. Take a fork and break it up, add some beef flavor bouillion, make a thickning with corn starch and add it to make a gravy. Salt and pepper to taste. Spoon this over a slice of bread and mashed potatoes. Outstanding!

My Mother used to can everything...including venison. Don't ask me how she did it, cos we never had air-conditioning back then,,and us kids would bail outside to play because the stove would drive us to cooler temps. I wish I had stayed inside to learn. Here's a good video I found for ya. Hope it helps. http://www.youtube.com/watch?v=DC93nOHMkEs

Bean, I have canned deer meat for years, I just opened a jar that I canned in early 2010 and it tasted as fresh as the day it was canned. I use it to make BBQ sandwiches or put it in soup or chili. These are great to take camping or to deer camp. Good luck on canning this year, you will enjoy it.
Do not go where the path may lead, go instead where there is no path and leave a trail.

Canned venison is as good as any canned beef. I add salt, pepper and some water to cover the meat. Follow canning time for beef. Mix some drained venison with your favorite Bar-B-Q sauce for a great sandwich. h.h.
