I like to use tomatoes that are mostly green with a slight pink on them for frying. Season them in 50/50 mix of flour and corn meal, salt and pepper, then fried in bacon grease. YUM!

Who else likes fried green tomatoes? h.h.
We love em, too. We freeze green tomatoes at the beginning and towards the end of the season. Slice and flour them just like your getting ready to fry them, then put them on a cookie sheet and stick them in the freezer overnight. In the morning take the frozen green tomatoes and throw em in a Baggie. No freezer burn and you can have FGT in the winter.
