1 lb Ground Venison
2 tb Vegetable Oil
1 Small onion, diced
6 Eggs
1 can of diced Jalapenos or green chilies
1 lb Cheddar Cheese, mild or sharp

Brown ground venison in vegetable oil with onion and season to taste.

Break eggs and add diced jalapenos. Stir over medium heat until eggs are nearly cooked. Sprinkle cheese over top. Remove from heat and let sit for 2-3 minutes. Serve with salsa or sour cream.
