Marinate and season the breast (chunks) however you prefer. Then I wrap peppered bacon around them, and slap 'em on the grill! Just that easy. This is what didn't get eat for dinner.....

Thanks. There was a very similar thread on a national duck site I go to and a lot of the guys felt that not pre-cooking the bacon ran the risk of over cooking the dove breasts. I'm going to cook some for my wife's son and a couple of his buddies in the next week.

I thought this was intriguing, although I've not tried it.
Sprinkled with hickory smoke salt (spice islands or homemade only), then finished last two minutes over high flames drizzled with Orange blossom or tasmanian leatherwood honey, pulled off and spinkled with chopped rubbed tarragon

Hey guys, you gotta shop in the VERY liberal stores to get the really good seasonings. Whole Foods, Pennzies, Trader Joe's and a number of others like that, then mix your own.

Don't care for the cheese on mine at all...... now you're starting to over power (hide) the flavor of the dove.
And I use cajun seasonings on mine for an additional "kick".
