I'm sure there is better out there but here is what we did the last time and was fairly good, in my opinion. Now, there is only my wife and I so we don't make huge batches.
1 lb deer burger a few slices of andouille (hot) saute/brown the meat quarter to third of onion, chopped half to three quarters of a green peppers, chopped two garlic clove, chopped We saute the onion, peppers and garlic separate from the sauted meat 1 14 ounce can of diced tomatoes w/garlic, basil and onion 1/2 cup of beef broth three chopped banana peppers Italian seasoning, red pepper flakes and cumin 2 small cans of Bush Chili bean starter Texas ( we use the medium heat beans)
We probably let it cook at least an hour and a half to two hours.
When I make it I also put in thyme, paprika and some hot chili powder instead of red pepper flakes.

We use HOT CHILI BEANS in our chili. A good tasting bean is critical IMO.
We too like LOTS of stuff in our chili, chunkier the better.
We also like ours VERY SPICY HOT!!! So LOTS of different kinds of diced peppers in it.

As an FYI, we use Red Gold diced tomatoes and Bush's Texas beans. As Bow said, we the spiced (medium or hot) diced tomatoes and beans.

Got deer burger thawing out now. Making a big pot tomorrow! Went today and bought 4-5 diff kinds of peppers to go in it, and had to pick up the beans.
