I got a cabelas snack stick kit, gonna try to smoke some this weekend. It came with 21mm casings. Any tips from the pros?

Some very tedious work stuffing these little devils. I just used a jerky gun....there has got to be a better way. Very pleased with the result though. 3 hours to stuff 50 of em, 6 hours in the smoker, several heinys watching the smoke, and here is what I got. VERY TASTY!

Looks great! Will be trying soon.. I will be smoking a few racks of brats as well. I have had a tendency in the past to overcook (on the smoker) -- therefore, this is caution to myself when I try again.

Christmas for the guys this year? 3lb roll of summer sausage, 3lbs of smoked brats, and 1lb of jerky- maybe I will sub out the snack sticks for the jerky?

I bought a stuffer from LEMs a couple of years ago. It is one of those with a crank. Holds 5 lbs. of meat.

If you make very much summer sausage it's a worthwhile investment.

Before this I used the stuffing attachment on my grinder. That was a real pain.

Those sticks look tasty!

You need a water stuffer with a foot control.

I've been making gobs of these goodies the past few years.

My best investments make been...

The LEM Jerky Cannon. That thing holds 1-1/2 pounds. I bought the extra long metal stuffing tube to slide the 21mm collagen casings over. I use this for snack sticks.
