I prefer them smoked. I used to have a homemade smoker that worked really well for any game and mostly used it for salmon, trout. Its since rusted out on me and I,m thinkin of buyin a new one, and keepin it out of the elements. Anyway...Its tough to beat a smoked goose. I,ve ate them many ways, and if its done too long, shes DRY. When I smoke one, I used a small hot plate, with a pot of wood chips on top of it. Hardly any heat cooked the bird, but rather the smoke did the cooking. Alot of folks use too much heat and the actual smoke taste is there but not as tasty. Depending on the smoker, it only takes a couple 3 hours....you,ll never use the oven on another bird...

I use a crock pot to cook most of my geese. Make sure the meat(breast and legs) is totally covered with water. Include any spices or flavors that you like to flavor the meat. Sometime during the cooking time you need to get the heat high enough to cause the fat to come to the top of the water. Skim off the fat and when the meat separates or the bone turns out of the leg the meat is done. Use the meat in much the same way you would a roast. We bar-b-que ours a lot and eat on sandwiches or serve with noodles as a Stroganoff.

Man....you gotta try it smoked, there is NO makin stroganoff, no fat skimmin, no makin something else out of it to mask the meat. Injection works but really no need as long as its not oversmoked...
