Last year I took a part of the breast and sliced it up really thin and used it in a stir fry. Yummy !!!

I prefer to cook mine this way. Very easy but very good! cut in 1 inch cubes dip in egg bread with shore lunch breading http://www.shorelunch.com/products_breading.cfm fry in canola oil for about 10 min until golden brown put on paper towel and soak up excess oil Enjoy!
