Very simple, very good.

Cubed backstrap (or other cuts) to ~1 inch/bite size pieces.
Wrap in 1/2 strip of maple cured center cut (just my preference) bacon. Use toothpick to secure bacon.
Pan fry. Dip in barbecue sauce or steak sauce.


It's hard to soar like an eagle when you're flying with a bunch of turkeys.

Grilled Back Straps:

I prepare them the same as animalhouse except I lightly salt and pepper them before I wrap them in bacon. I also stick a tooth pick into each piece to keep the bacon in place. I then place them on the grill until they are done the way I like them (medium well). These straps are always tender and delicous.

My aunt used to make an hors'duerve that was similar. A small piece of sausage(cubed) with a water chestnut slice, and wrapped in bacon. She made her own sauce, I think from BBQ sauce and brown sugar, with a toothpick stuck thru.. They were always a hit at xmas time. I like chestnuts becuz they always give you a nice crunch on certain foods. Nice recipe Animal...

All variations on these are also very good! Can be made many diff ways............ but hey, anything with bacon on it is a fav of mine anyhow!! laugh
