Don't know about the quail, but those long-legged turkeys should be fine. They can scratch up a meal in lots of places. If the snow is too deep in the picked corn and bean fields they can always scratch around in the woods where the snow is not very deep. This is especially true under some cedar and pine trees. Also, do turkeys eat the seeds of the large cedar trees?

I saw a flock of 50+ in one field and another dozen or so in a different field yesterday. They were all feeding just fine. You have to remember that while we have 12"-18" of snow (depending on where you are) that the winds open up spots or create thin spots in the fields. That is where the birds will go and feed. A few will be lost, heck we lose a few in even a mild winter, but for the most part they will be fine.
