I don't know of any place where you can get the specific recipes. You'd probably have to email each club. The IDHA basically marinates deer meat that is cut into small cubes in coke or pepsi with a bit of teriyaki overnight or for couple of hours before cooking. Then we bread the meat with Drakes breading with seasoning such as Lawyers Seasoned salt or such. The deep fried at about 375 for a few minutes.

I will say that the Asian carp that was fried there was pretty darn good.

The creek bank potato dish, I'm not sure if thats the one you're speaking about, is provided by the Indiana Bow Hunters Association. You might go the IBA website, I don't know the website address anymore, and post up what/how they do them.

Creek bank potatos

1.layer of bacon

2.layer potato

3.layer onion

4. season salt pepper or my favorite Mortons Nature's Seasoning.

5. layer smoke sausage

6. layer potato

7. layer onion

8. seasoning again

9. layer bacon

cover top with aluminum foil and seal all sides, place on grill or above campfire and rotate sides about every 10 minutes for an hour to hour and 1/2 depending on how hot the coals are and how big a package you made. Be careful on flipping as any leakage of juices will cause coals to flame up.
I've also added on occasion various peppers to teh mix and that is a nice touch if you like heat. Fixed it just last night and added poblanos.

If you aren't using a non stick foil spray foil with a non stick spray NOT butter, butter burns FAST.
