Duck Jambalaya

Ingredients:
2 whole ducks or 6-8 breasts (I prefer whole ducks and I cook them off the bone)
2 tsps. black pepper
2 tsps. salt
2 tsps. season salt
4 tbsp. olive oil
1 pound smoked sausage cubed
2 cups chopped onions sweet
2 cups bell peppers ( I use yellow,red,orange)
1 cup celery chopped
1 tsp. cayenne or more if you like it hot!
2 tbsp. Cajun seasoning
2 14.5 oz cans stewed tomatoes
4 cloves garlic minced
3 bay leaves
2 tsps. thyme
4 quarts of chicken broth or stock
1 lbs jumbo uncooked shrimp
1/4 cup green onions chopped
8oz baby portebellas sliced or chopped
1 Tbsp. Parsley
White or wild rice

Directions:
1)Boil duck in chicken broth until tender. Pull meat from bones and shred meat. Strain broth and save broth until later.
2) Heat olive oil in 6 quart or bigger pot, add shredded duck and brown it to flavor pot. Remove duck and set aside.
3)Add smoked sausage and brown
4)Now add onions, peppers, celery, salt, cayenne, black pepper, and half Cajun seasoning cook for 5-10 minutes while stirring.
5)Add tomatoes, garlic, and bay leaves and cook until tomatoes start giving off juices. 5-10 min
6)Now add Thyme, duck, and Broth cook to a boil reduce heat and simmer 50-60 min.
7)Season shrimp with remaining Cajun seasoning
8)Add shrimp, mushrooms, simmer for 10 minutes
9) Remove from heat and allow it to rest for 15min
10) prepare rice
11)Remove Bay Leaves
12)add green onions and parsley
13)Serve Jambalaya over rice with corn bread!

I promise fellas this is a winner it is well worth the work to use up those less than tasty ducks, or even the best tasting ones.

Thanks for posting. MIght give this a try on snow geese breasts this February.

works good with geese! the meat almost taste like beef after it cooks this long, it gets very tender.
