I have a pretty big blackberry patch, every year we make the usual pies, cobblers, jams and jellies. I enjoy making wine so I keep back enought berries to make 10 gallons. If you like a full bodied blackberry wine, this is it. If you would like to try it here is the recipe.

60 pounds Blackberries (About 2 five gallon buckets)
30 pounds of sugar
4 gallons Ice Mountain Spring Water
2 packets Red Wine Yeast
It takes about 6 months to ferment to complete dryness

I have 6 gal going racked it off first time added the rest of the sugar it hasent restarted yet any suggestions itst in the tobacco barn man cave temp maybe??

Some times it will take a day to start again after you rack, I stir it good, keep it warm and keep everything clean. Enviroment does help. LOL

Moved it in the house (warmer) and I got bubbles!!!! not as aggressive as the last fermentation but working Problem solved Thanks

I keep mine out in the workshop, right now it stays about 80 degrees out there and it is bubbling like crazy.

When its ready, you've got to post up a picture of a glass of this stuff so we can the clarity and color.

FYI, for every bubble you see there is a equal amount of alcohol

Have close to or a little over 100 gal working now.

Probably 3-400 done in the barrel still or bottled up.

It's good stuff when made right.

Here is bottle from last year to show what the finished product looks like. It is exactly like this years wine.
Since I already have the bottle open, I guess I will just have to go ahead and drink it. Yeeeee-Ha!

The wine is finally done, and right in time for Christmas. It makes a very good gift. Every one I know wants a bottle of my wine.

That is really cool. If the taste is anywhere close to the visual, it's got be good.

I never let mine get below 70 degrees all the time it was fermenting, the bubbling is steadier and it seems to speed up the process a little.

every thing I have read says the longer it works the better the wine so I am not concerned just hate missing the holidays drinking of it
