BERRY JELLY RECIPE! - 07/07/2008 06:27 PM

Blackberry, Black Raspberry...

Add just enough water to cover your berries in a pot, then boil them for quite a while, cooking most of the juice out of the berries. Then strain all the chunks, pieces, skins and seeds out of the juice after cooking it down (can use cheesecloth or a fine strainer). BTW, you don't have to wash the berries super good before hand, with the straining method.

It takes 4 1/2 cups of the berry juice,
6 cups of sugar,
and one box of SURE-JELL Premium Fruit Pectin.

Bring the 4 1/2 cups of juice, and the box of Sure-Jell to a rapid boil.

Then add the 6 cups of sugar to it, and bring back to RAPID boil on HIGH heat for 1 solid minute (from the time it starts boiling again).

Immediately dip/pour the cooked jelly into your jars!

Then boil your jars of jelly submerged in water for 5 mins.......... remove from boiling water, retighten lids, and let stand for 24hrs.

VERY SIMPLE to make................... believe me, you'll thank yourself!

About how many blackberries does it take to get 4.5 cups of juice?

Man, I'm not sure. We picked 3 gallons worth of berries (in a 5 gal bucket), and if I had to guess, I'd say we wound up with over 20 cups of cooked juice.

The box of "jellatin" that I referred to originally in the jelly recipe................... it is SURE-JELL PREMIUM FRUIT PECTIN!

so how many chiggers did you end up w/ BowBo? My Rasberry excursion Sun proved to be 2 gal of berries and 2 million chiggers! And yes I took a bath in deep woods off...................I may have to call into work tomarrow due to bug bites!

And yes I'll probably be out pickin more berries!!!

I wound up with a few around my waistline, and about 5 or 6 on my ankles, and even one under my armpit!! So yeah, I got my share of 'em too! LOL

Well I got a batch of this stuff cooling right now...

Picked a good gallon of berries and added just enough water to bring it to the top of the berries. Boiled and strained and it yielded exactly 9 cups. I just doubled everthing and made a double batch laugh

I hope it works out for ya doing it that way. I suggested to my wife about doubling the recipe to make things go quicker....... and she said NO WAY! It has to be done 1 batch at a time to work right!

So I don't know if she is just stuck in her ways, or if there really is any truth to it.

So keep us posted on how it turns out (sets up/not too watery). Because if it works for you, I'll be sure to double up next time for time savings. wink

Well I thought it came out awesome. But then again I don't know what it tastes like if it was made in single batches. I had it on an English Muffin this morning.

It appeared to set up fine. Maybe slightly softer than if it was Welches.

The flavor it great, and blackberry is my favorite.

Bowbo, that's twice you've got me hooked. That seafood chowder was great as well.

Think you can do the just the berry juice one day then refrigerate it for the rest of the process the next day?

YES!
We had so much juice that we HAD to refrigerate ours before finishing all the batches. Some of it was in the fridge for a week before we finished making all the jelly out of it.

Works well with mulberries as well. I put down a large tarp under the tree, make Luke climb and shake the limbs, and we sort out the good/bad. In the process the seeds float to top. It has a good flavor.

Mulberry recipe:

What you need:

5-1/2 cups prepared fruit (buy about 3 qt. fully ripe mulberries)

1/2 cup fresh lemon juice

1 box MCP Pectin

1/2 tsp. butter or margarine

8-1/2 cups sugar, measured into separate bowl



Make It:

BRING boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.



CRUSH mulberries thoroughly, one layer at a time. Measure exactly 5-1/2 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.



STIR in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 4 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon. This is where you can get rid of the seeds as they float to the top.

Still have enough juice to make 6-9 more jars.
Not to mention the 5-6 jars already eaten, and given away.

Love my raspberry jam on toast w peanut butter. Down to just 3 1/2 jars though. Still have a couple quarts of berries in the freezer plus 2 quarts of choke berries in freezer to make more.
