One slab marinated and seasoned... ready to wrap in bacon! Going on grill @ 4:30

And already have the jerky cut-away strips seasoned and started!

Yeah I like it spicy. But once it's put into ziplocs, most of the big flakes gets knocked off anyway.

I made 75lbs of burger the other night and made some last night with a mushroom sauce. Tonight we are having backstraps and loins with cheddar potatoes. Finest eating around.
